My Sweetheart at 30

We celebrated Kenny's 30th last week and  we had a really great time!

Kenny and I are currently working on a list of 30 things to do during the next 30 years (my 30th is just around the corner as well).

Day 7

Pecan-Crusted Pork Tenderloin Crostini with Strawberry Balsamic Sauce

Yeah, that name is way too big.  Let me sum it up for you...

A-MA-ZING.

I am not kidding, make this before you die!  This was my favorite of the whole week, really, I just can't say enough.  We have Paula Deen, at foodnetwork.com, to thank for courtesy of this master piece.

There are quite a few steps, but they are easy steps.  For my version I used walnuts because I don't like pecans.  Click here to experience the best pork EVER!

Strawberry and Mozzarella Salad

Day 4

Peach and Strawberry Soda

I made this for my nephew's first birthday party last weekend, and it was hit with kids and adults alike!

Day 3

Strawberry-Lovers Pie

For the record, I will never disclose how much of this pie I ate!

I feel a better name for this pie would be Chocolate-Covered Strawberries meet no-bake cheesecake.  By now, you should have a beautiful vision in your head.  This recipe came from Taste of Home's The Complete Guide to Country Cooking cookbook.  I saw this book at a friend's house and went home and ordered it on Amazon the next day, that is not usually something I do, but I LOVED this book.

3 squares semisweet choc, divided (I just used semi-sweet choc chips, because that is what I had)

1 T butter

1 pastry shell, baked

6 oz cream cheese, softened

1/2 c sour cream

3 T sugar

1/2 t vanilla

3-4 c fresh strawberries, washed and hulled

1/3 c strawberry jam melted

Melt two squares of choc with the butter; brush over the bottom and up the sides of a pastry shell.  Chill.  Beat cream cheese, sour cream, sugar, and vanilla until smooth.  Spread over choc layer, cover and chill for 2 hours.  Arrange strawberries, tip ends up, over filling.  Brush jam over all.  Store leftovers in the fridge.

Day 2

Waffles with Strawberry Syup...

Really EASY...

I wanted to make a syrup with big chunks of strawberries in it.  This is what I created...

1 lb Strawberries (clean and hulled)

2 c sugars (you could probably use less)

1/4 c water

Cook and mash in a medium sauce pan over medium-high heat until it is boiling.  Let boil about 2-3 minutes, let it sit for 5-10 minutes.  Serve warm with fresh whipped cream!

Strawberry Week

Strawberries were on Sale...there was nothing to do but buy...a lot...of them!

I bought 9 pounds of strawberries.  We ate the first pound in the first day...just raw...they were delish!

We are now starting Strawberry Week!  We are going to try a different {new} strawberry recipe everyday for a week!  I thought I would share since my sister was asking about some of them, so here you go.

Day One...

Strawberry-Peach Smoothie

Here is our EASY recipe if you are interested:

1 c fresh Stawberries

1 c frozen peaches

1 c water

3 T sugar

Blend all ingredients until smooth...and don't forget the straw!

Exploring

 I took a girl's shopping trip to Park City with my in-laws, and it was a lot of fun!  I just had to bring back these cute shirts for my little sweethearts!

Spending time out at the horses with Uncle Steven.

We also enjoyed a birthday party for Cody, a family trip to Provo, lots of time with cousins, spending a night a Grandpa Great's house, a girl's night with Hailey to see a movie, and just hanging-out around the farm.
